I HAD NEVER TASTED real Indonesian food before moving to Jakarta. But when I first tried it, I quickly fell in love with it. The complexity of the flavors, the use of many spices and the heat from the use of lots of chilies immediately converted me. Unlike Filipino cuisine, which is a curious mix of Spanish, Chinese and dare I say American flavors, the spices of Indonesian cuisine made me sweat, salivate and crave for more.

This is our annual tribute to all sorts of Indonesian food. But this year, we want to delve into what the world can expect. There are many word class Indonesian restaurants just waiting to be discovered.

Our cover feature is on relaunch of 1945 at Fairmont Jakarta. I personally sat through a few food tastings before they open on August 15 and I assure you this is something not to miss. Next we visit Salon Bali at Hotel Indigo Bali Seminyak Beach. Chef Nic Philip conjures up a contemporary view of Indonesian cuisine — creative, slightly different but maintaining authentic flavors. We also feature regional Palembang food, a little nod to this month’s Asian Games co-host, iconic Indonesian dishes from Hotel Borobodur Jakarta and The Dharmawangsa Jakarta and creations by Chef Chandra Yudasswara.
